saturday I was at one of those mexican meat markets. they had these bottles of pork grease for sale. I mean a thick looking substance like cooking oil after you've let the grease sit after frying chicken or french fries or anything like that. someone told me it was used to make tamales. I don't know.
It was probably liquid lard, if so then yes they use that to make tamales. Why did you eat so many man?
they were given to me yesterday and i just took them for lunch. i didnt' get any hot sauce with them though. i'm still trying to figure out what the other two were. had a texture like cottage cheese.

When I first took a glance at the thread title, I thought it said downloaded. I've missed only 4 or 5 days of work the last 20 years. One of them was ~15 years ago when an evening cleaning lady in the building I worked at sold me a dozen tamales.
I have eaten 33 tamales in one sitting, and yes it was one of the worst ideas in the history of my life. I enjoyed them going down though. Plus I ate them with this hot sauce i bought off the street in Mexico.
I think they call it lard. That stuff's disgusting...so disgusting that it tastes good when you fry anything in it. Tamale makers are notorious for cooking their tamales in it. Anyone remember that tamale truck over in Webster, Texas? I think it was on the other side of I-45 off of Clear Lake City Boulevard...which turns into Choate Road. For all I know, their still there even though it's been 20 years since I ate tamales from them. That truck used to always be there selling tamales. I think they did their tamales in lard. Those things were greasy as hell but they were good.
That would be Friendswood, Yankee. Yeah, those were good. Everyone around here would get them from that guy. I haven't seen the truck in a long time though. Don't they make tamales from the meat from the cow's head?
Pork tamales are quite common and I haven't figured out the logistics of making them from cattle. Perhaps you are thinking of Barbacoa de cabeza?
My worst experiences with mexican/tex-mex food was 1) with a combination of mexican nachos with everything, a 'torta' and an 'agua de orchata' beverage.. which had an effect that gave me for the first time in my life.. a keen understanding of the term.."anal leakage" 2) a fajita plate.. no, not the kind where you get a single serving of fajitas, a side of beans and rice. but the kind where they just give you a plate with meat, and several tortillas.. no sides. the meat is the entree and the two sides.. with pico de gallo, guacamole and salsa.. I have no way to describe the effect any better.. other than to say.. that although I have no clue to what child birth is like.. i'm sure this was a close second to that in pain and suffering.. needless to say.. i've been a whole lot more careful since then when it comes to mexican/tex-mex food..
WOW. I didn't even catch this one yesterday. Kudos to you, BOLO YEOUNG. You're a stallion among mules. IT depends what size they were. If they're like Salvadoran Tamales, they are in a banana leaf and flat and square-like big. If they're like my mother-in-law's THICK tamales, they got nothing inside, just the white corndough and wrapped in one husk, and they could choke the heck out of you like they almost did me. If they're like my co-worker's mother-in-law's, they're about 5" long and 1" wide, greasy and good, and I could down 20 of those in one sitting like spaghetti. If they're like my grandmother's, they're not thin, not thick, just cooked well enough and with just the right amount of meat. They taste great re-heated on the grill or skillet. YUMMY. Has anyone ever tried the SWEET tamales that are pink with raisins inside? YUMMY. It's LARD... it is pig's OIL. It is GREAT STUFF.
