I have a chemistry minor, and I am pre-dental. I have a couple of classes that I am interested in, one being polymers.

Does anyone have suggestions of classes that would help out in post-graduate courses?

The classes that the dental schools require you to take for entry are exactly what you need to take. I tell every pre-health person that the only class that isn't required that I wished I had taken was an in depth anatomy course because gross anatomy is hard as balls. But you're going into dentistry so you only need chest and up so half of an undergrad gross course would be worthless to you.
